Sauteed Green Beans with Shallots and BaconI used to hate green beans until I tried them prepared like this.

1 lb. green beans, stem ends trimmed
1 tbs. olive oil
1 shallot, diced
2 pieces bacon, cooked and crumbled
1 squeeze of fresh lemon juice

1. Blanche the green beans in boiling water for one minute.
2. Over medium-high heat, cook shallot in olive oil for two minutes.
3. Add beans and bacon. Cook for another one to two minutes.
4. Squeeze some fresh lemon juice over the beans and serve.

You can also add a splash of white wine if you have some on hand.
