Baked Meringues with Berries
This makes for a nice, fresh, simple and light dessert. Give it a try.Ingredients:
1 C sugar
1 C egg whites (about 4 large egg whites)
1/2 teaspoon vanilla
Mixed berries and whipped cream to top

1. Beat egg whites and sugar until soft peaks form.
2. Add vanilla and beat until stiff peaks form.
3. Spread 3/4″ thick onto a cookie sheet lined with parchment paper. You can spread it all in one piece or make smaller individual meringue “nests.”
4. Bake at 250 degrees for an hour.

You can serve them slightly warm or let them cool completely. Top with mixed berries and whipped cream.
